Makes 5 1/2 cm thick pancakes in an 8" or 20 cm frying pan
Prep ~5 min | Frying ~ 15 min | Total ~ 20 min 8 tbsp plain flour 1 tbsp caster sugar 1/2 tbsp bicarbonate soda 4 tbsp semi skimmed milk 4 tbsp water 1 tbsp vegetable oil 2 eggs 1/2 lemon zest (optional) 1 tbsp vanilla extract (optional, for sweet only) pinch of salt (for both) Topping of your choice: For salty I use cheese, avocado and salmon For sweet I use jam, honey, fresh fruits and dried/candid fruits (preferably citrus to contrast the sweetness)
